Re: Be autonomous in vegetables all year long
An easy answer: don't eat it !!
Well, there are many vegetarians ... why wouldn't there be carnivores?
Good without laughing, I think Did67 saw it because of the size and efficiency of its vegetable garden but it is necessary to make conservation (jars, freezer ...) because the vegetables do not like freezing or snow too much ... .I believe...

Re: Be autonomous in vegetables all year long
choose the cultivated varieties appropriately and have a greenhouse (not necessarily large) to spend the winter and prepare (hasten) the vegetables. Basically, the idea is to artificially shorten the duration of winter with the two aforementioned instruments at the beginning of the message. I forgot the culture on hot layer ... and finally have preferably a cellar or a dedicated room where to store the picked vegetables.
on the other hand, autonomy runs the risk of being inseparable from the idea of doing as little as possible because producing energy in winter to store it in the form of fruits and vegetables, it costs a lot in work
there is also the solution to do like the bears ... hibernate

Indeed it is a good answer!
Another good answer would be "eat them only when they have grown in the vegetable garden", which already opens up more horizons!
Not easy to start a subject like that .....

Re: Be autonomous in vegetables all year long
In fact it depends a lot on personal consumption ....
When I see the number of cabbage of all varieties of Didier I tell myself that autonomy goes through a sacred surface or at least a sacred management of the exploitable surface to keep everything as it should be in the least amount of space and to be able to circulate correctly between the boards ...
Well, it's already implementation management software that should be created ...

Re: Be autonomous in vegetables all year long
you have to grow vegetables that keep easily like potatoes ... or vegetables that keep well in jars like green beans
the use of the freezer is more questionable ... if we keep too long we spend more electricity than the value of what we keep

Re: Be autonomous in vegetables all year long
We obtained remarkable results in an "underground silo" for carrots, beets, celery (until June of the following year). This is a buried barrel or trash can; ensile by mixing vegetables and "barely wet" sandy soil (like wet sand); cover the top so that it does not freeze (with us): a tarpaulin then bales of hay ...
Leeks, no problem, outside.
Kale kale, no problem outside (but they quickly go to seed in spring) ...
Winter salads, winter and produce early in the spring.
Lamb's lettuce goes through the winter ...

Re: Be autonomous in vegetables all year long
in Alsace you especially have sauerkraut which is a good way of preserving cabbage ... in Charente, sauerkraut only exists in a canned can

It's easy to do - well, I'll make a video!

good idea ... if you could also show us your buried kegs for carrots, celeriac and others ... how many do you have? and where can you buy these kegs?
