Yes, you can desolder and deport as you want, check all the same values before finalizing the assembly (see if it is a response in voltage or ohms ...).

And even if; "I would adapt" via setting the thermostat to have the right temperature (nursery).

Phone cable is very thin: do it with a speaker cable (0,75 mm2)
