Your "stinking" juice is a sign of "bacterial rot", bacterial rots which sometimes result in "putrid liquefactions" ...

If my memories of bacteria are correct, you have on the one hand an anaerobic rot, which gives putrid odors (because the S is not oxidized, but "converts into H²S which gives these odors, in the absence of oxygen ).
Outside, it is undoubtedly quite another thing, a bacterial development of the "biofilm" type, forming this glue. A bit of what we sometimes encounter when a piece of raw chicken has been left in the fridge well beyond the DLC.
