Hum! The strong slope of the canyon downstream of the falls does not change the principle that I exposed (wrong?) Higher.
The solid flow "pumps" energy from the water and the bed of a stream is simply the result of the erosion / deposit balance.

If you remove the erosion at the level of the falls (I exaggerate to better show the idea), you interrupt the solid flow downstream and therefore the balance in question is broken, it creates a zone of strong erosion until balance is restored.
