You can't measure much.
The motor is a brushless with integrated electronic control card. You do not have direct access to the windings. https://fr.wikipedia.org/wiki/Moteur_sa ... tionnement

If you want to make it an alternator, you must recover the current directly at the terminals of the windings and go through rectifier bridges and a battery charge control electronics.

For a result probably disappointing, because the pale are not suitable as Christophe had said.
