A few remarks justifying the use of hydraulics: It all depends on the size of the wood you want to grind, but as soon as the diameter is a little substantial the feed rollers are very busy.

I am not sure that belt drive is possible for 2 reasons:
1- Difficult to consider anything other than small diameter driven pulleys since the rollers are limited in diameter, therefore low power transmitted.

As rightly evokes Did67, the hydraulic (or often electro-hydraulic) declutching system operates with a small amplitude of the control rod and a high sensitivity, which will be harder to obtain from a mechanical device.

Finally, last point, the hydraulics allow reverse gear, essential in the event of jamming (rather concerns small diameters) or exceeding the maximum caliber (feet of rods close to the maximum).
