And here are the relative permittivity ...
water = 80 x the vacuum, which means that the electrostatic forces are divided by 80 and that many ionic solids are dissolved there ...

I'm looking for the breakdown voltage of a ... water capacitor.

I do not find : Cry:

I also can't find the ionization field of the water : Cry:

For air, I believe it is 3 V / m (lightning, storm ...)

For water, that would be divided by 80 ... Bof, bof, hypothesis perhaps abusive because the chemistry of the air and the water are not the same (H2O is not O2, 4N2) ...

Let's admit, this gives 37500 V / m
So if you put 5 cm between 2 plates, the breakdown voltage would be:
37500 * 0.05 = 1875V

5 mm: 187.5 V

1 mm: 37.5V

To your calculators for Estockée = 1/2 C U² : Cheesy:

Nah that's not possible!

37.5V does not arch at 1mm, that's for sure, at least not under normal ambient humidity conditions.

187.5V does not arch at 5mm either, that's for sure!
