Your "stinking" juice is a sign of "bacterial rot", bacterial rots which sometimes result in "putrid liquefactions" ...

Yes that understand me! : Cheesy: : Cheesy:

But that does not explain the white gel on the surface (since the internal juice did not flow through the cracks ...) ...

Hello,
It is reminiscent of kefir grains which are aggregates of microorganisms in symbiosis https://fr.wikipedia.org/wiki/K%C3%A9fi ... k.C3.A9fir

If my memories of bacteria are correct, you have on the one hand an anaerobic rot, which gives putrid odors (because the S is not oxidized, but "converts into H²S which gives these odors, in the absence of oxygen ).

Outside, it is undoubtedly quite another thing, a bacterial development of the "biofilm" type, forming this glue. A bit of what we sometimes encounter when a piece of raw chicken has been left in the fridge well beyond the DLC.

With all reserve.

"biofilm" is the right term, thank you Did67 https://www.france-science.org/Etude-de ... eries.html
He found himself fed by the sap which oozed from the wound, which made it take the form of a jelly.

I think we would save ourselves a lot of muddy discussions if we used precise terms to describe real things ...
