Another good answer would be "eat them only when they have grown in the vegetable garden", which already opens up more horizons!

you have to grow vegetables that keep easily like potatoes ... or vegetables that keep well in jars like green beans

the use of the freezer is more questionable ... if we keep too long we spend more electricity than the value of what we keep

We obtained remarkable results in an "underground silo" for carrots, beets, celery (until June of the following year). This is a buried barrel or trash can; ensile by mixing vegetables and "barely wet" sandy soil (like wet sand); cover the top so that it does not freeze (with us): a tarpaulin then bales of hay ...

Leeks, no problem, outside.

Kale kale, no problem outside (but they quickly go to seed in spring) ...

Winter salads, winter and produce early in the spring.

Lamb's lettuce goes through the winter ...

in Alsace you especially have sauerkraut which is a good way of preserving cabbage ... in Charente, sauerkraut only exists in a canned can
