The principle is that the wood, while burning, will partly gasify ... until there remains only coal / or embers rather.
Part of these gases are not burned properly in the primary focus, for lack of oxygen (fire is regulated by closing more or less the valve (s) of draw, so all the available oxygen is monopolized by the fire in the main focus).
With post-combustion, we also inject air behind the fireplace. This one will allow these gases to burn.
It is both cleaner and will generate better performance.

Arf, I was referring to the visual and olfactory aspects of gases, but we say the same thing!
As for the condensation visible shortly after the exit, it signs to me an optimal use of the installation.
It's pretty commonplace to see it on a boiler optimized industrially, but it's more effective when you get this result with a stove DIY.

so for me I keep the log to make big fire when it is very cold and prefer the wood crushed in plate for automatic feeding of a small fire
